On Open Kitchen Mondays, we offer unique specialty cooking classes to a limited number of students. Level 2s get priority to sign up, but if the class does not fill, we open the class to level 1s - as we are now doing for next Monday when Chef Baxter will run a class in Mexican cuisine from 1:30-5:00 at Rundles.

If you want to sign up - first come, first serve - email mwestley@stratfordchef.com without delay! This is a rare opportunity to explore this tasty cuisine. Below are some of the recipes for the class:

Hi everyone - Attached are three sample job openings, one of which you will apply for, tailoring your resume and covering letter accordingly. (Lesson 3)

Needless to say, this is just for practice; you're not really applying.

Due to Sharron Cook’s withdrawal from the school, we need to adjust the groups. Erin Negus has agreed to move from Group C to Group B. She will still do her dinner lab this Saturday with Group C, but will not participate in Group C’s lunch lab on Friday. Instead she will join Group B for the Thursday night lab, taking Sharron’s position – which she will assume going forward, with a couple of exceptions TBA.

For Group C, this means removing Erin & adjusting the rotation to eliminate the server position (everyone shifts up or down one position to accommodate) except when Erin was slotted as SC (there will be no SC those dates.)

Just a reminder that it is your responsibility to connect with Kaya about your lunch lab menus well in advance of your PO due date (1-2 weeks ahead). Kaya will need to meet with you at least twice to develop the menu before approving your PO. If your PO is submitted late, you get 0 for it - and there is no guarantee you will get the ingredients you need, as Mike simply may not have time to obtain them. So please think ahead! Thanks, Meg

Hello Level One Students! I am writing on behalf of myself and Ryan Whibbs to welcome you to the Stratford Chefs School and to Gastronomy I. We hope you have had a great first week and that you are feeling excited for the year ahead! Both of us look forward to seeing you tomorrow afternoon in class and to sharing our enthusiasm for the subject. The course has been completely revamped for this year and we have lots of resources and activities to share with you! We would ask that for tomorrow you read through the first chapter of the manual, especially all the assignments so you are prepared with any questions you may have. We will be going through the course outline and each assignment as well. We expect that you will bring your iPad with you to every class both to access the manual and other activities. An old fashioned pen and paper is also not a bad idea! In class we will be sharing three files with you via Air Share so please make sure that program is enabled on your iPad before class starts.
